I broke three ceramic knives – here’s what I learned
Three knives, three “incidents” – that tuition fee was well spent. As someone who also knows that heartbreaking clink–crash in the kitchen, I totally get the frustration of picking up the pieces. Those three knives taught me far more than just “handle with care.”


Knife #1 (broken tip): I lost to wishful thinking
I rinsed the knife and casually stuck it into the drying rack, but the handle wasn’t fully seated. When I turned to grab a plate, my clothes caught the knife, it tipped over, and the tip hit the tile floor – ping – gone.

  • Lesson: Never “just put it down somewhere.” Ceramic knives have a hardness of over HRA 90, but their toughness is extremely low – lateral impact is their Achilles’ heel. Drying racks, sink edges, or any hard, angular surfaces are danger zones. My golden rule now: dry it immediately and put it back in its holder, or lay it flat on a dedicated cutting board. Never leave it leaning or suspended.


Knife #2 (chipped edge): I misused its role
It was so sharp that I thought, why not smash some garlic with it? Or chop frozen meat? Well, the garlic cracked, but so did the blade – two or three chips along the edge. Done for.

  • Lesson: A ceramic knife is an assassin, not a warrior. Its hardness is second only to diamond, so it excels at slicing (boneless meat, vegetables, fruit). But it absolutely cannot tolerate twisting, smashing, or chopping. Even when cutting something moderately firm like pumpkin or hard cheese, use a pressing motion rather than a hacking one. Remember: it only cuts in a straight, vertical line – no prying or torquing.


Knife #3 (broken tang): I ignored the structural weak point
This one hurt the most. It fell, but the blade didn’t hit the ground – the handle did. When I picked it up, the joint where the blade meets the handle (the tang) had snapped clean off.

  • Lesson: The most fragile part of a ceramic knife isn’t the edge – it’s the tang. Many all‑ceramic knives have blades that are glued or riveted to the handle, creating a stress concentration at that joint. The shock from the fall travels right there, and the blade breaks at the root. So when choosing a knife, look for a full‑tang design (where the blade runs all the way through the handle). It costs more, but it prevents the blade from flying off as a projectile.


Two more “hidden” lessons I learned the hard way:

  1. Never try to catch it. When a knife falls, your instinct is to grab it mid‑air. But ceramic blades are razor‑sharp – if you catch the edge, the stitches will cost far more than a new knife. The right move: jump back and let it fall.

  2. Sweep up the shards – don’t pick them up by hand. Ceramic fragments are like glass – even sharper than the original edge. After a break, use a damp paper towel or a slice of bread to pick up the tiny splinters, then sweep thoroughly. Never use your bare fingers to collect those nearly invisible micro‑chips.


Now I keep one mental note every time I use a ceramic knife: it’s a precision cutting tool, not a rugged kitchen workhorse. If you’re thinking about a fourth one, I’d suggest getting a model with an anti‑slip finger ring – or just switch back to a high‑carbon steel knife. You’ll slice a little slower, but your heart won’t race every time you pick it up.
